These were 1.25 Thick, about a pound each. Both sides seasoned with Salt, Pepper, McCormick Montreal Steak Season, and bit of Rosemary, and a Bit of Thyme

Next, they were Vacuum Sealed, with several pats of Butter.

In Sous Vide at 140F, for 3 Hours. I only wish the Anova APP was 1/2 as good as the unit is.

After 3 hours, start Vegetables, remove steaks and pat dry. Bring the Breville Up to 450 for Searing. Why flat plates? Grill marks are over rated. Better flavor with 100% sear / crust.

4 Minutes at 450 Sear

Rest for 10 minutes.

First cut, look at the juices, and that is Medium
