Start with about 5 # of Chicken Thighs (with Bones, That’s how God made them). Trim skin and arrange on pan.

Dry Brine, and rest in Fridge for 60-90 minutes. Mean while, mix up Alabama White Sauce.
- 2 Cups Dukes
- 1/2 Cup Apple Cider Vinegar
- 1/4 Cup fine grind black pepper
- 1 TSP Cayenne pepper.

Paint the chicken with the Alabama White Sauce.

Now dust with “Holy Voodoo Rub”

And back in the fridge for another 90 Minutes.
And now loaded in my YS640S set at 275F

For the next 2 hours, every 25 minuets or so, brush on another coat of Alabama White Sause.
