We enjoy a local BBQ Brand, “Swig & Swine”. They have the record for staying at their location.

Might say they do things right. But this post is about Chicken. They do that right also. My wife always orders chicken.

We asked how the do their chicken. I did not expect a recipe card, but a container of their chicken rub was almost as good.

Spatchcock the chicken, then split the breast bone. Dust the inside with the rub. Flip over and spray with olive oil, then a nice coat of rub.

Then load into the cooker set at 350. Spritz with apple cider every 30 minutes.

Start checking at 2 Hours. Skin should crisp up.

Skin fat rendered, and did crisp. All meat was moist and tender.

WIFE APPROVED.
