Unpacked, and WOW. 13.5 pounds of WAYGU brisket. Shipped frozen, it was still frozen, so into our deep freeze it went! This was December 2024.

Fast forward to June 2025, Thawed 3 days in our refrigerator. Broke out a disposable cutting board taped to the counter and unpacked this baby. YouTube that’s been a great help and learning all things barbecue or spine surgery or whatever..
In either case I’m following a protocol 200F, 8 hours unwrapped, pull, wrap, extend charcoal ring, and cook 8 hours wrapped.

The flat side looked great, only only trimmed a little fat. Found no silver skin. Went through the trimming process as portrayed by Meat Church BBQ. I did round the corners just a bit. The Point side was not pretty, but cleaned up nicely.
Here you can see my workspace, a disposable cutting board taped to the counter right next to the sink. Trim the fat down to about a quarter inch. On the opposite side that’s a bad meat edge so to speak, so it was trimmed off. I speak highly of the “Butcher wizard” slicing knife, it worked great.

Now we ship our attention to preparing the Weber Kettle.
First thing is build a charcoal ring. 2+1, with hunks of hickory.

Next, the rotisserie ring, with the air gaps sealed with aluminum tape. The brisket will cook now 8 inches higher than normal.

Now for inside prep. I’ll be up at 5 AM to wrap.

It’s now 7PM June 2025. I will start up the kettle, and load into kettle at 9PM.
9Pm, brisket is loaded. Channel 1 flat, channel 2 point.
